Warah Meushy

This multi-step recipe is best made with some helping hands. Used at special occasions, Warah Meushy, has delicious clean ingredients that are sure to impress your guests.

Ingredients

  • 1 Cup of Rice (Soaked in boiling water, 2-3 times prior)
  • 8 Bunches of Parsley
  • 2 Bunches of Green Onions
  • 5 Field Tomatoes
  • 1 can of Chickpeas
  • 3/4c Olive oil
  • 2-3 Lemon
  • 100 Vine Leaves
  1. Dice tomato, parsley, and green onions. Parboil rice by soaking in boiling liquid 2-3 times prior to adding to mixture.

2. Mix diced ingredients and rice with olive oil, chickpeas, lemon and salt and pepper. Allow mixture to drain through a colander and set the drained liquid aside.

3. Place a spoonful of the drained mixture in the middle of each vine leaf and roll tightly using burrito style (tucking in both sides and rolling from front to back).

4.  On the bottom of a non-stick pot place a layer of unrolled vine leaves and sliced tomatoes. Place rolled vine leaves on top and layer. At the top layer use a thinly sliced tomato to cover. Place a plate upside down on the wrapped vine leaves to keep them pressed.

4. Pour the reserved drained liquid and additional water to cover to the top of the vine leaves and boil on very low heat until vine leaves are softened.

4. Turn upside down onto a plate for fantastic presentation. Serve with plain yogurt.
