Turkey and Cauliflower Rice- Instant Pot
Eat Healthier with this adapted recipe featuring ground turkey instead of beef. Cooked in the instant pot, makes this recipe quick and easy for a weeknight meal.
Ingredients
- 1 Cauliflower
- 1 White Onion
- 2c Basmati Rice
- 1lb ground turkey
- 1L chicken broth
- 1 heaping tsp 7 spice
- 1 tsp nutmeg
- salt & pepper

1. Chop cauliflower into 1/4 florets. Wash and dice white onion.

2. Wash and season cauliflower with salt and pepper. Set oven to 350 degrees Celsius. Roast cauliflower with olive oil on a sheet pan for approximately 15 min or until cauliflower softens and browns slightly.

3. Set instant pot to saute function. Saute onions until translucent.

4. Add ground turkey and continue to saute until fully cooked. Add cauliflower on top of ground turkey and rice with broth.

5. Seal instant pot and set to rice function. Allow food to complete rice cycle and leave pot until natural release is complete (do not vent manually after the cooking cycle).

6. Serve with a side of yogurt for a deliciously healthy meal.
