Red Lentil Soup

Nothing is better than a nice bowl of soup on a cold winter day, especially a soup so simple that your kids will enjoy it too. Red lentil soup is a quick soup made with ingredients often found in the pantry. Lebanese children are often lucky to eat this as one of their first foods. Traditionally made on the stove top, this instant pot version is quicker for all those working parents.

Ingredients

  • 1 white onion
  • 2c red lentils
  • 1/2c white rice (basmati)
  • 10c water
  • Olive oil

1. Wash and dice onion.

2. Press sauté on instant pot and sauté onions with a touch of olive oil.

3. Add lentils and rice and sauté an additional couple of minutes.

4. Seal instant pot and manually set pressure cook at high for ten minutes.

5. Quick release pressure and open lid.

6. Using immersion blender, blend ingredients until purées.

7. Add salt and pepper to taste.

8. Serve immediately with a topping of fried pita crisps.
