Mediterranean Stewed Zucchini
A simple dish made by my mom during war time. Tasty, filling and requires minimal ingredients.
Ingredients
1 large onion
3 garlic cloves
4 small/medium zucchini
6 small ripe tomatoes
Salt & Pepper
Water
Olive Oil
1 tsp Chili Flakes

1. Dice onion, garlic, tomatoes and zucchinis.

2. With olive oil, fry onion and garlic until translucent.

3. Add tomatoes, zucchini, and 1/4-1/2 cup water, boil and reduce to simmer. Add additional water until all vegetables are tender.

4. Spice with salt, pepper and chili flakes and serve with a side of pita.
