Kletcha (Spicy Cookies)

My kids live on these, make a batch and they’ll be gone! Ingredients

  • 3 kg flour (15c)
  • 1 kg semolina
  • 1 c olive oil or vegetable oil
  • 1 tbsp mahlab
  • 1 tbsp yansoun (anis)
  • 1 tbsp fenouille (fennel)
  • 2 whole nutmeg
  • 1 tbsp black seeds
  • 1/2 tsp cloves
  • 1 tbsp yeast (warm water)
  • 1/2 tsp of bicarbonate diluted with a little water
  • 1 kg sugar
  • 1 kg margarine
  • 5c milk
  1. Gather all ingredients. Prepare yeast by mixing with warm water and set aside.

2. Mix semolina with butter (margarine) and olive oil. Add milk and all the spices.

3. Add flour and mix all ingredients until it becomes a dough.

4. Roll dough into logs. Flatten and cut into 3 inch pieces. Before cooking, brush with an egg and bake at 375C.

5. Cool & Serve.
