Fattoush Salad
Fresh ingredients, some tasty herbs and fried pita, topped off with some sumac dressing and you’ve got this simple tasty salad!
Ingredients
- 3-4 fresh pita breads
- Extra virgin olive oil
- 2 heads of romaine lettuce
- 3-4 medium sized tomatoes
- 1 English cucumber
- 1/2 bunch of mint
- 1/2 bunch of parsley
- 2 tbsp sumac
- Lemon juice to taste
- Salt and pepper

1. Prepare pita crisps by cutting up fresh pita into squares.

2. In a frying pan, fry pita with olive oil until light brown and crispy. Deep fry for greater flavour. Set aside.

3. Cut up all vegetables and herbs and combine.

4. Toss salad with a generous amount of poured extra virgin olive oil, sumac, lemon juice, salt and pepper.

5. Add pita crisps, toss again and enjoy:)
