Cauliflower Rice

Cauliflower rice is a tasty comfort food on those cold winter days. It’s a simple and delicious meal that can be enjoyed on its own or paired with yogurt. Enjoy!

Ingredients

  • 1 cauliflower
  • 1 white onion
  • 2c basmati rice
  • 1lb lean ground beef
  • 1L chicken broth
  • 1 heaping tsp 7 spice
  • Fresh nutmeg
  • Salt
  • Pepper
  • Olive oil

1. Chop cauliflower into 1/4 florets. Wash and dice white onion.

2. Wash and season cauliflower with salt and pepper.

3. Set oven to 350 degrees Celsius. Roast cauliflower with olive oil on a sheet pan for approximately 15 minutes or until cauliflower softens and browns slightly.

4. Using a drop of oil, fry onion in a small pan until translucent.

5. Combine onion, and raw ground beef into a pot.

6. Fry meat with onion until the beef is browned and cooked through.

7. Layer pot, starting with ground beef and onion at base, and adding layer of cauliflower).

8. Continue to layer by adding 2 cups of rice on top of cauliflower. Season with a teaspoon of 7-spice and fresh nutmeg.

9. Add just over a litre of chicken broth to pot, ensuring that all ingredients are submerged under liquid.

10. Boil liquid in pot and reduce to simmer. Cook rice until soft adding additional chicken broth if rice is still hard following evaporation.

11. Mix and serve . Enjoy plain or with plain yogurt.
